Earlier this summer, our family succumbed to the flu that had been making its rounds throughout the area during the late winter and spring. I thought we’d made it through flu season without one of us getting it, which for my family of 5 is a small miracle. I think what happened was I got overconfident, so I stopped pumping everyone with vitamins, stopped using hand sanitizer every time we touched anything—basically I got complacent. I mean it was summer after all and who thinks about summer flu?
Then, it hit.
I’m convinced my husband brought it back with him from his business trip, and then he passed it to our 4-year-old daughter, who passed it to her older brothers, and then mom went down.
Up until this point, I had chalked up the drama about how it took you out so completely to overdramatic people. Certainly, it couldn’t be that bad…I was so wrong.
Our whole family was out of energy and barely wanted to eat, but that didn’t stop me from needing to feed them. So, I made a huge batch of my mom’s Easy Peasy Chicken Noodle Soup. Between that and the flu medicine we got from the doctor, we were back to feeling like ourselves in no time—and by no time I mean a week.
Here is the recipe for the easy and delicious chicken noodle soup:
5 large chicken breasts, cut into bite size chunks
6 carrots, sliced (or buy pre-sliced ones to help cut down on prep time)
5 stalks celery, diced
2 boxes of low sodium broth
1 cup water
2 tsp black pepper
1 tsp garlic powder
1 bag egg noodles
1) Bring water and broth to a boil.
2) Add chicken, carrots, celery, pepper, and garlic. Let boil for about 15 minutes before adding the egg noodles. Let mixture boil for 5 additional minutes.
3) Turn heat to medium low and let cook for 20 minutes.
The great thing about mom’s soup (besides its curative powers) is that it’s so easy to serve and heat up, and it gets better as the days go by.
