This time of summer is usually when I start to dread cookout food the most. One person can only stomach so many burgers, hot dogs, and pasta salad. Unfortunately this time of summer is usually when my kitchen is the hottest, which makes turning on the oven not an option! So, I like to find different things that either don’t involve cooking or involve the grill.
One of my new favorite things to make on the grill is pizza, yup, pizza! It’s delicious and so easy. Mix up your favorite pizza dough, or take the easy way out like I do and buy the fresh pre-made dough (usually found in the bakery.) Brush some olive oil on your grill and put your dough right on the grill, once the underside is cooked, brush oil on the topside and flip it over. After it’s flipped put some sauce, cheese, and what ever other topping you want. I personally like to add some baby spinach or arugula, goat cheese, and tomatoes! Then close the top of the grill wait 5-10 minutes and then enjoy! So easy!
We like to get Grace involved and we each make our own individual pizzas. Grace loves to help me separate and spread out the dough. I let her pick her own topping, but I put them on for her. Getting Grace involved in dinner always makes her more likely to eat it!
As far as easy sides go, my new favorite, go to recipe is for Watermelon salad! It’s an easy recipe I got from Skinny Taste Blog and it’s low fat, a double win!
- 3 cups seedless watermelon, cubed and chilled
- 1/2 cup crumbled feta (I use low-fat feta and it still tastes yummy)
- 7 oz arugula (I’m obsessed with it lately)
- 1/4 small red onion, sliced very thin
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- kosher salt and fresh pepper
Wash arugula and dry well. In a large bowl whisk vinegar, olive oil, salt and pepper. Toss with the remaining ingredients and serve.
So that’s it. An easy dinner, still on the grill, but something different!
